Caroline Mitchell, the Butchers’ Company’s 2018 Nuffield Scholar presented her Nuffield report on ‘Carcass grading and payment systems to improve the eating quality of UK meat’ to over 300 people who attended the prestigious Annual Nuffield Conference in Warwickshire at the end of November.

She demonstrated that although there had been some improvements in the eating quality for beef, pork and lamb in the UK, we still had much to learn from other countries – particularly in respect of grading and payment mechanisms.

Caroline has now set up her own consultancy company, FQM Global, which provides consultancy advice on all aspects of meat-eating quality for beef sheep and pigmeat companies.

The Worshipful Company of Butchers sponsors Nuffield Scholars because the Scheme has an excellent record of developing young people for leadership and greater responsibility in their respective companies / organisations or farming situations.

Suitable applicants from the meat and livestock industry of between 25 and 45 years of age are invited to explore a topic of their choice through study and travel.
