The 1st year Programme structure (beef)
The Young Meat Professionals Scheme follows a Four year programme, providing an insight to the end-to-end journey of a meat product.
Following a simalar structure as year one, year two folows the journey of pork, year three, poultry and year 4, Lamb or Game.
The programme will cosist of networking visits to:
- Farms
- Abbatoirs
- Primary and secondary processing
- Packing
- Retail or food service.
As well as webinars to support these visits, including:
- Meat regulations, food safety and controls
- Role of official vet
- New product development
- International trade
- Quality and consistency
- Fith quarter
- Ingredients and additives
- Personal effectiveness skills- presentation skills, getting the most from your mentor etc
